🍲 Creamy Leek and Minced Meat Soup

Ingredients
- 300 g beef mince (or half & half)
- 1 large onion(s)
- 2 tbsp bacon cubes
- oil for frying
- 2 small leek stalk(s) (or one large stalk)
- 2 large potato(es)
- 200 g processed cheese (or cream)
- 2 tbsp sour cream
- 600 ml vegetable broth
- salt and pepper
- nutmeg
Instructions
- 1. Peel the onion and cut it into small cubes.
- 2. Heat some oil in a large pot.
- 3. Add the onion cubes and the bacon to the pot and fry them.
- 4. Add the minced meat and fry it until it changes color.
- 5. Stir the meat occasionally so that it cooks evenly.
- 6. Clean the leek and wash it thoroughly.
- 7. Halve the leek and cut it into thin strips.
- 8. Wash the leek strips again if there is any sand.
- 9. Add the leek to the fried minced meat and fry it briefly.
- 10. Deglaze everything with vegetable broth.
- 11. Wash the potatoes and peel them.
- 12. Cut the potatoes into small cubes.
- 13. Add the potato cubes to the soup.
- 14. Let the soup simmer for about 20 minutes.
- 15. Stir in the processed cheese (or cream) and the sour cream.
- 16. Let the soup boil briefly.
- 17. Season the soup with salt, pepper, and nutmeg to taste.
- 18. Serve the hot soup in deep plates or soup bowls.
