🍽️ Fluffy Napkin Dumplings the Traditional Way

Ingredients
- 250 g bread rolls (dry, cubed or dumpling bread)
- 2 egg(s)
- 300 ml milk
- 70 g butter
- 60 g onion(s)
- parsley (finely chopped)
- salt
- nutmeg
Instructions
- 1. Whisk the eggs in a bowl with the milk.
- 2. Add a generous pinch of salt and some freshly grated nutmeg.
- 3. Whisk the mixture vigorously until well combined.
- 4. Dice the onions into very fine cubes.
- 5. Melt the butter in a pan and heat it up.
- 6. Sauté the onion cubes until they become translucent.
- 7. Let the onions become soft.
- 8. Place the bread cubes in a large bowl.
- 9. Pour the egg-milk mixture over the bread cubes.
- 10. Add the sautéed onions.
- 11. Finely chop the parsley.
- 12. Add the parsley to the dough.
- 13. Mix all ingredients thoroughly together.
- 14. Let the dough rest for one hour.
- 15. Take heat-resistant cling film.
- 16. Shape the dough into rolls with a diameter of 5 to 6 centimeters.
- 17. Place the rolls on the film.
- 18. Wrap the dumplings tightly in the film.
- 19. Tie the ends of the film securely.
- 20. Bring water in a pot to a gentle simmer.
- 21. Place the wrapped dumplings into the hot water.
- 22. Let the dumplings cook for 30 to 40 minutes.
- 23. Remove the dumplings from the film only shortly before serving.
