Ingredients
- 150 g Butter
- 500 g Sugar
- 6 Lemon(s)
- 6 m.-large Egg(s)
- 1 packet Lemon Flavoring ((Citroback), optional)
Instructions
- 1. Squeeze the lemons and pour exactly 300 milliliters of juice into a container.
- 2. Melt the butter in a pot over medium heat.
- 3. Add the lemon juice, sugar, and lemon zest (or flavoring) to the pot and stir well.
- 4. Whisk the eggs in a separate bowl until they are fully combined.
- 5. Pour the whisked eggs through a fine sieve directly into the butter-lemon mixture in the pot.
- 6. Continue to stir the entire mixture constantly with a whisk.
- 7. Heat the mixture until it thickens into a creamy consistency and reaches a temperature of 85 to 90 degrees Celsius.
- 8. Remove the pot from the heat as soon as the target temperature is reached to prevent the mixture from boiling.
- 9. Fill the hot cream immediately into small jars that have been rinsed with hot water beforehand.
- 10. Variation: Replace the lemon juice with 300 milliliters of orange or blood orange juice and use orange flavoring or the zest of untreated oranges accordingly.
