  1. 1. Squeeze the lemons and pour exactly 300 milliliters of juice into a container.
  2. 2. Melt the butter in a pot over medium heat.
  3. 3. Add the lemon juice, sugar, and lemon zest (or flavoring) to the pot and stir well.
  4. 4. Whisk the eggs in a separate bowl until they are fully combined.
  5. 5. Pour the whisked eggs through a fine sieve directly into the butter-lemon mixture in the pot.
  6. 6. Continue to stir the entire mixture constantly with a whisk.
  7. 7. Heat the mixture until it thickens into a creamy consistency and reaches a temperature of 85 to 90 degrees Celsius.
  8. 8. Remove the pot from the heat as soon as the target temperature is reached to prevent the mixture from boiling.
  9. 9. Fill the hot cream immediately into small jars that have been rinsed with hot water beforehand.
  10. 10. Variation: Replace the lemon juice with 300 milliliters of orange or blood orange juice and use orange flavoring or the zest of untreated oranges accordingly.
