🍽️ Creamy Lentil and Chard Curry

Ingredients
- 250 g chard
- 2 onion(s)
- 2 clove(s) of garlic
- 1 piece of ginger root (approx. 2 - 3 cm)
- 250 g lentils, red
- 2 tbsp butter
- 2 tbsp sesame seeds
- 1 tsp cumin powder
- 0.5 tsp turmeric powder
- 400 ml coconut milk
- 400 ml vegetable broth
- salt
- 2 tbsp lemon juice
Instructions
- 1. Rinse the chard under running water and remove any stubborn dirt spots.
- 2. Dice the thick chard stems into small cubes.
- 3. Cut the chard leaves into thin strips.
- 4. Peel the onion, the garlic clove, and the piece of ginger.
- 5. Finely dice the onion.
- 6. Mince the garlic and the ginger finely.
- 7. Rinse the lentils in a sieve under running water.
- 8. Let the lentils drain well in the sieve.
- 9. Heat the butter in a large pan.
- 10. Sauté the diced onion, minced garlic, and ginger in it.
- 11. Cook the onions until they are soft and translucent.
- 12. Add sesame seeds, cumin, and turmeric to the pan.
- 13. Fry the spices briefly until they are fragrant.
- 14. Add the drained lentils to the pan.
- 15. Add the prepared chard.
- 16. Pour the coconut milk into the pan.
- 17. Add the broth to the pan.
- 18. Season the curry with salt.
- 19. Let the mixture simmer over medium heat for about 15 minutes.
- 20. Taste the finished curry with salt before serving.
- 21. Add a splash of lemon juice and stir.
