  1. 1. Remove the hard core from the Savoy cabbage and cut the vegetable into small pieces.
  2. 2. Cook the light inner leaves (about one third of the head) together with the finely chopped onion, a pinch of salt, a little sugar, pepper, and grated nutmeg in the cream (or milk) until soft. Then puree the mixture finely.
  3. 3. Lightly salt and sweeten the darker leaves. Steam them with a little water and a piece of butter for about 5 minutes under a lid. Then mix the steamed vegetable with the Savoy cabbage puree.
