  1. 1. Finely dice the onions.
  2. 2. Cut the beef into small cubes of about one centimeter per side.
  3. 3. Crush the cumin seeds in a mortar.
  4. 4. Cut the peppers into thin strips.
  5. 5. Finely chop the garlic.
  6. 6. Peel the potatoes and carrots.
  7. 7. Cut the potatoes and carrots into cubes that are slightly smaller than the meat pieces.
  8. 8. Fry the onion cubes in ghee in a casserole dish until golden brown.
  9. 9. Add the meat cubes.
  10. 10. Sear the meat over high heat for five minutes.
  11. 11. Stir in the tomato paste.
  12. 12. Roast the tomato paste for about one minute.
  13. 13. Stir constantly to prevent the tomato paste from burning.
  14. 14. Sprinkle paprika powder, salt, marjoram, and the crushed cumin over everything.
  15. 15. Roast the spices while stirring for another minute.
  16. 16. Deglaze with red wine.
  17. 17. Let the liquid reduce almost completely.
  18. 18. Add the tomatoes to the pot.
  19. 19. Add the broth to the pot.
  20. 20. Add the meat stock (fond) to the pot.
  21. 21. Add the garlic to the pot.
  22. 22. Add the pepper strips to the pot.
  23. 23. Add the carrots to the pot.
  24. 24. Add the bay leaves to the pot.
  25. 25. Let the goulash soup simmer on low heat for about one hour.
  26. 26. Add the potatoes.
  27. 27. Let the soup simmer for another 25 minutes (or a little longer).
  28. 28. Whisk the sour cream with some warm soup in a separate bowl.
  29. 29. Stir this mixture back into the pot with the soup.
  30. 30. Serve the soup hot now.
