Ingredients
- 700 g beef (from the top round)
- 700 g onion(s)
- 3 clove(s) garlic
- 100 g tomato paste
- 1 tbsp paprika powder (rose spicy)
- 1 tbsp paprika powder (mild sweet)
- 1 tsp caraway
- 1 tsp marjoram
- 1 tsp salt
- 400 g tomato(es) (from the can, chunky)
- 1 bell pepper(s) (red)
- 1 bell pepper(s) (green)
- 1 carrot(s)
- 500 g potato(es) (mostly waxy)
- 450 ml beef broth
- 800 ml beef stock
- 150 g sour cream
- 1 small glass red wine
- 2 bay leaves
- ghee
Instructions
- 1. Finely dice the onions.
- 2. Cut the beef into small cubes of about one centimeter per side.
- 3. Crush the cumin seeds in a mortar.
- 4. Cut the peppers into thin strips.
- 5. Finely chop the garlic.
- 6. Peel the potatoes and carrots.
- 7. Cut the potatoes and carrots into cubes that are slightly smaller than the meat pieces.
- 8. Fry the onion cubes in ghee in a casserole dish until golden brown.
- 9. Add the meat cubes.
- 10. Sear the meat over high heat for five minutes.
- 11. Stir in the tomato paste.
- 12. Roast the tomato paste for about one minute.
- 13. Stir constantly to prevent the tomato paste from burning.
- 14. Sprinkle paprika powder, salt, marjoram, and the crushed cumin over everything.
- 15. Roast the spices while stirring for another minute.
- 16. Deglaze with red wine.
- 17. Let the liquid reduce almost completely.
- 18. Add the tomatoes to the pot.
- 19. Add the broth to the pot.
- 20. Add the meat stock (fond) to the pot.
- 21. Add the garlic to the pot.
- 22. Add the pepper strips to the pot.
- 23. Add the carrots to the pot.
- 24. Add the bay leaves to the pot.
- 25. Let the goulash soup simmer on low heat for about one hour.
- 26. Add the potatoes.
- 27. Let the soup simmer for another 25 minutes (or a little longer).
- 28. Whisk the sour cream with some warm soup in a separate bowl.
- 29. Stir this mixture back into the pot with the soup.
- 30. Serve the soup hot now.
