Ingredients
- 1.5 kg pork knuckle(s)
- 2 onion(s) (peeled and halved)
- 5 clove(s) garlic (peeled and halved)
- 1 clove(s)
- 5 bay leaves
- 1 tsp juniper berry(ies)
- 0.5 tsp cumin
- 2 tsp salt
- a little pepper (coarse from the mill)
Instructions
- 1. Fill a large pot with water. Add the onions, garlic, and spices. Heat everything until it briefly comes to a boil, then place the pork trotters inside. Make sure they are completely covered with water. Let the trotters simmer in the broth for about 90 minutes.
- 2. Shortly before the cooking time is up, preheat the oven to 180 to 200 degrees Celsius. Remove the trotters from the water, let them drain, and roast them in the oven for about an hour until they are nicely crispy.
