  1. 1. Wash the quinces thoroughly.
  2. 2. Remove the fuzzy skin from the fruits.
  3. 3. Cut the quinces into bite-sized pieces.
  4. 4. Keep the skin of the fruits.
  5. 5. Place the quinces together with the spices in a pot.
  6. 6. Cover the fruits just with water.
  7. 7. Cook the mixture for about two hours.
  8. 8. Cook until the fruits are soft.
  9. 9. Let the mixture steep overnight.
  10. 10. Press the pulp through a clean cloth.
  11. 11. Extract the juice from the pulp.
  12. 12. Decide how clear you want the jelly to be.
  13. 13. Press the pulp gently if you want a particularly clear jelly.
  14. 14. Press firmly if you want more juice.
  15. 15. Measure the extracted juice.
  16. 16. Add one kilogram of jam sugar per liter of juice.
  17. 17. Boil the mixture for about four minutes.
  18. 18. Perform a gel test.
