Ingredients
- 1 kg quince(s)
- 1 stick cinnamon
- 1 anise (star anise)
- 3 clove(s)
- water
- 1 kg jam sugar (per liter of juice)
Instructions
- 1. Wash the quinces thoroughly.
- 2. Remove the fuzzy skin from the fruits.
- 3. Cut the quinces into bite-sized pieces.
- 4. Keep the skin of the fruits.
- 5. Place the quinces together with the spices in a pot.
- 6. Cover the fruits just with water.
- 7. Cook the mixture for about two hours.
- 8. Cook until the fruits are soft.
- 9. Let the mixture steep overnight.
- 10. Press the pulp through a clean cloth.
- 11. Extract the juice from the pulp.
- 12. Decide how clear you want the jelly to be.
- 13. Press the pulp gently if you want a particularly clear jelly.
- 14. Press firmly if you want more juice.
- 15. Measure the extracted juice.
- 16. Add one kilogram of jam sugar per liter of juice.
- 17. Boil the mixture for about four minutes.
- 18. Perform a gel test.
