  1. 1. Put all the ingredients for the marinade into a pot, stir well, bring to a boil, and let simmer for about 15 minutes.
  2. 2. In the meantime, wash and dry the spare ribs. On the underside of the bones, there is often a thin membrane that you can easily remove with the tip of a knife once you find the starting point. Then divide the spare ribs into portions of 3 to 4 bones each.
  3. 3. By now, the marinade should also be finished reducing.
  4. 4. Lay out large sheets of aluminum foil, place one portion of spare ribs on each, and brush them generously with the marinade on both sides. Then wrap the meat in the foil. If there is any marinade left after all the spare ribs are wrapped, set it aside.
  5. 5. Place the wrapped spare ribs on a baking sheet, making sure the bone side (underside) is facing down so the fat can flow through the meat. Bake them for 2.5 to 3 hours in the oven at 150 °C with top and bottom heat. Then remove them and let them rest for about 10 minutes.
  6. 6. Unwrap the spare ribs and place them on the grill. If there is any marinade left, brush it on and grill them until nicely crispy and brown.
  7. 7. A little tip: If you are using a charcoal grill, place some tree bark on the coals. This gives the spare ribs an additional, slight smoky flavor.
  8. 8. However, you can also finish grilling the spare ribs in the oven by unwrapping them and roasting them in the oven.
