🍰 Fluffy Muffins with Cream Cheese and Raspberries

Ingredients

- 250 g sugar
- 1 vanilla pod(s)
- 200 g cream cheese (or mascarpone)
- 325 g flour
- 1 packet baking powder
- 125 g butter (melted)
- 250 g raspberries
Instructions
- 1. Preheat the oven to 180 degrees Celsius using top and bottom heat.
- 2. Beat the eggs together with the sugar and the seeds from one vanilla pod using a mixer until the mixture is fluffy and airy.
- 3. Stir in the cream cheese.
- 4. In a separate bowl, mix the flour with the baking powder.
- 5. Add the dry ingredients to the egg mixture briefly until they are just moist enough that no dry lumps remain.
- 6. Gently fold in the melted butter and the raspberries.
- 7. Fill the batter into the muffin cups.
- 8. Bake the muffins for about 20 minutes in the preheated oven.
- 9. If you use frozen raspberries, you can simply add them to the batter while still frozen.
- 10. The baking time remains the same.
