🍽️ Hias' Original Bavarian Obatzda

Ingredients
- 200 g Brie (cake brie)
- 30 g Butter
- 2 tbsp Onion(s) (very finely diced)
- 2 tbsp Sour cream
- 0.25 tsp Paprika powder, rose-hot
- 1 tsp Paprika powder, noble-sweet
- 2 pinch Pepper, black (freshly ground)
- 1 pinch Cumin powder
- 0.25 tsp Sea salt
- 0.5 tsp Mustard, medium-hot
- 30 ml Beer (light or wheat beer)
- Onion green (for decoration)
Instructions
- 1. Cut off the rind from the cold Brie cheese. Let the cheese come to room temperature for half an hour. Mash the Brie with a fork on a plate until creamy. Slice the spring onions into rings and set them aside for decoration. Chill the Obatzda in the refrigerator.
- 2. Take the Brie out of the fridge and immediately cut off the rind, as this is harder when the cheese is warm. Cut the cheese into coarse pieces.
- 3. Let all ingredients except the green onions warm up to room temperature. Mash all ingredients except the green onions on a soup plate with a fork, but not too finely, and mix them. Slice the green onions into rings and decorate the Obatzda with them. Chill it.
- 4. If you prefer it spicier, increase the amount of hot paprika powder to half a teaspoon and the amount of mild paprika powder to one and a half teaspoons.
- 5. Enjoy this popular cheese specialty, especially in Bavarian beer gardens, with pretzel rolls. Wash it all down with a well-chilled beer. The shelf life is one to two days.
