  1. 1. Remove the green stems from the strawberries.
  2. 2. Wash the strawberries thoroughly.
  3. 3. Puree the washed strawberries into a smooth mash.
  4. 4. Put the strawberry puree into a cooking pot.
  5. 5. Cut the vanilla pods lengthwise.
  6. 6. Scrape out the tiny black seeds and pulp from the pods using a knife.
  7. 7. Add the vanilla seeds and pulp to the pot as well.
  8. 8. Squeeze the juice from the lime.
  9. 9. Add the lime juice to the mixture in the pot.
  10. 10. Boil the mixture for about 4 to 5 minutes.
  11. 11. Use 2:1 pectin sugar and follow the instructions on the package exactly.
  12. 12. Immediately fill the hot jam into prepared jars.
  13. 13. Seal the jars tightly.
