🍽️ Frozen Christmas Stollen with Rum Fruit Topping

Ingredients
- 3 egg yolks
- 3 egg whites
- 30 g sugar
- 100 g white chocolate coating
- 80 g stollen (finely ground)
- 1 pinch stollen spice
- 2 pinch orange peel (grated)
- 200 ml cream
- 120 g fruit (rum top fruit)
- 80 g sugar
- 100 ml orange juice
- 10 g cornstarch
- cinnamon
- cloves
- star anise
- mint
- physalis
- powdered sugar
Instructions
- 1. Whip the cream until stiff. Separate the eggs, beat the egg whites with half the sugar until stiff, and beat the egg yolks with the remaining sugar until creamy.
- 2. Chop the chocolate finely and melt it in a double boiler. Stir the egg yolks in quickly. Fold in the cream, add ground stollen mix, orange zest, and stollen spice. Finally, fold in the egg whites.
- 3. Line a loaf pan with plastic wrap and pour in the mixture. Freeze overnight in the freezer compartment. Tip: Take the stollen out 20 to 30 minutes before serving so it can thaw slightly, achieving the right consistency and best flavor.
- 4. Caramelize the sugar in a pot. Deglaze with orange juice. Add some liquid from the rum fruits and the spices (preferably in a tea strainer) and simmer everything slightly. Finally, add the fruits and thicken the sauce with a little starch if necessary.
- 5. Decorate: Remove the frozen Christmas stollen from the pan and slice it. Place one to two slices slightly offset on top of the rum fruit topping. Garnish with mint and physalis, and dust with powdered sugar. Enjoy your meal!
