🍽️ Crunchy Quiche with Spinach and Goat Cheese

Ingredients
- 160 g flour
- 3 tbsp water
- 100 g butter, soft
- 1 pinch(es) salt
- 1 tbsp butter
- 3 slice(s) bacon (omit for the vegetarian version)
- 2 onion(s)
- 1 clove(s) garlic
- 200 g spinach (blanched and drained or frozen)
- 4 tomato(es), dried in oil
- 3 egg(s)
- 150 g sour cream
- 100 g goat cream cheese
- 3 tbsp hard cheese (freshly grated)
- salt and pepper
- nutmeg
Instructions
- 1. Put the flour and salt into a large bowl.
- 2. Press a small indentation into the center of the flour mixture.
- 3. Pour the cold water into the indentation.
- 4. Add the butter cut into small cubes.
- 5. Knead the ingredients into a smooth dough.
- 6. Wrap the dough in cling film.
- 7. Place the dough in the fridge for about one hour.
- 8. Cut the bacon into small cubes.
- 9. Cut the onions into small cubes.
- 10. Fry the bacon and onions in a pan with the butter.
- 11. Add the garlic to the pan.
- 12. Add the spinach to the pan.
- 13. Cut the tomatoes into strips.
- 14. Add the tomato strips to the pan.
- 15. Remove the pan from the heat immediately.
- 16. Whisk the eggs in a separate bowl.
- 17. Add the sour cream to the egg mixture.
- 18. Add the goat cheese curd to the egg mixture.
- 19. Season the liquid with salt.
- 20. Season the liquid with nutmeg.
- 21. Season the liquid with pepper.
- 22. Pour the egg mixture into the pan with the spinach mixture.
- 23. Stir everything well together.
- 24. Dust your work surface with some flour.
- 25. Roll out the dough.
- 26. Place the dough in the quiche pan.
- 27. Press the dough down gently.
- 28. Spread the goat cheese and spinach filling evenly over the dough.
- 29. Optionally, spread grated cheese over the filling.
- 30. Preheat the oven to 180 degrees Celsius with fan and bottom heat.
- 31. Bake the quiche for about 30 minutes.
- 32. Let the quiche cool down slightly before slicing.
- 33. Cut the quiche into six or eight slices.
- 34. Serve the quiche with a glass of white wine.
