Ingredients
- 50 g shallot(s)
- 30 g butter
- 200 g potato(es)
- 500 ml vegetable broth
- 300 ml cream (or milk)
- 50 g sour cream
- salt
- nutmeg
- 4 slice(s) bacon
- 1 potato(es)
- oil (for frying)
- chives (finely chopped for garnish)
Instructions
- 1. Dice the shallots into small cubes.
- 2. Sauté the shallots in butter in a pot.
- 3. Peel the potatoes and cut them into cubes.
- 4. Add the potato cubes to the pot with the shallots.
- 5. Pour the broth into the pot.
- 6. Cook the soup until the potatoes are tender.
- 7. Stir in the cream and the sour cream.
- 8. Blend the soup until smooth using a blender or immersion blender.
- 9. Season the soup with salt and nutmeg.
- 10. Fry the bacon in the pan until crispy.
- 11. Peel one potato for the garnish.
- 12. Cut this potato into small cubes.
- 13. Fry the potato cubes in oil until golden yellow.
- 14. Remove the cubes from the pan and place them on a paper towel.
- 15. Let the cubes drain and season them with salt.
- 16. Serve the soup on a deep plate.
- 17. Crumble the bacon over the soup.
- 18. Add the crispy potato cubes.
- 19. Garnish the soup with chives.
