  1. 1. Peel the onion and cut it into small cubes.
  2. 2. Clean the root vegetables and cut them into cubes as well.
  3. 3. Fry the vegetables together with the pork rind in a pot with some oil.
  4. 4. Soak the lentils depending on the variety (see package instructions).
  5. 5. Add the lentils to the vegetables along with the remaining soaking water.
  6. 6. Let the soaking water boil off.
  7. 7. Deglaze the mixture with vinegar and let it boil off as well.
  8. 8. Add vegetable broth, cut potatoes, and mustard.
  9. 9. Let everything simmer for approx. 20 - 30 minutes.
  10. 10. Cut the Vienna sausages or the smoked pork into bite-sized pieces.
  11. 11. Add the meat pieces to the soup and let them steep.
  12. 12. Season with salt, pepper, nutmeg, and sugar.
  13. 13. Add finely chopped parsley.
  14. 14. Serve the soup in a soup tureen and enjoy.
  15. 15. Tip: Stews taste almost twice as good the next day when they have fully steeped!
