🍽️ Hearty Lentil Stew with Vegetables and Sausages

Ingredients
- 1 onion(s)
- 2 large carrot(s)
- 2 large potato(es)
- 1 piece(es) celeriac
- 2 tbsp rapeseed oil
- 1 piece(es) pork rind
- 250 g lentils (dried, soaked in water)
- 1 splash vinegar
- 1 tbsp mustard
- 1 liter vegetable broth
- 4 sausages (savory and/or Kasseler slices)
- salt and pepper
- sugar
- nutmeg
- parsley (finely chopped)
Instructions
- 1. Peel the onion and cut it into small cubes.
- 2. Clean the root vegetables and cut them into cubes as well.
- 3. Fry the vegetables together with the pork rind in a pot with some oil.
- 4. Soak the lentils depending on the variety (see package instructions).
- 5. Add the lentils to the vegetables along with the remaining soaking water.
- 6. Let the soaking water boil off.
- 7. Deglaze the mixture with vinegar and let it boil off as well.
- 8. Add vegetable broth, cut potatoes, and mustard.
- 9. Let everything simmer for approx. 20 - 30 minutes.
- 10. Cut the Vienna sausages or the smoked pork into bite-sized pieces.
- 11. Add the meat pieces to the soup and let them steep.
- 12. Season with salt, pepper, nutmeg, and sugar.
- 13. Add finely chopped parsley.
- 14. Serve the soup in a soup tureen and enjoy.
- 15. Tip: Stews taste almost twice as good the next day when they have fully steeped!
