  1. 1. Wash the strawberries and remove the green leaves. Cut them in half or quarter large fruits. Optional: Lightly sprinkle with sugar so they shine and release some juice.
  2. 2. Place the gelatin in cold water for two to three minutes. It should be soft afterwards. Remove it from the water and squeeze it well.
  3. 3. Heat the squeezed gelatin with the lemon juice while stirring until it has completely dissolved. Add the lime syrup, powdered sugar, and buttermilk. Mix everything well and place the mixture in the refrigerator for a few minutes.
  4. 4. When the mixture starts to set due to cooling, whip the cream stiff and gently fold it in. Chill the mixture for at least three hours. (If you don't want to cut out scoops later, you can also portion the mousse into molds before chilling.)
  5. 5. Chop the nuts and roast them in a pan without oil until golden brown. Let them cool. Blend them in a mixer with oil, honey, and mint leaves to make a pesto.
  6. 6. Now it's time to plate.
  7. 7. Place two to three tablespoons of the strawberries on a flat plate. Scoop a ball of the buttermilk mousse with a spoon and place it in the center on the strawberries. Drizzle with the nut pesto and decorate with mint leaves.
