🍝 Creamy Tomato Noodle Soup with Fresh Basil

Ingredients
- 3 large tomato(es) (750 g)
- 2 tbsp olive oil
- 1 onion(s) (finely chopped)
- 1 clove of garlic (crushed)
- 1 small bell pepper(s) (red, finely chopped)
- 1 liter vegetable broth
- 3 tbsp tomato paste
- salt and pepper
- 1 tsp sugar
- 1.5 tsp basil (dried or 7 fresh leaves)
- 150 g pasta (soup noodles of your choice)
- optional sour cream
Instructions
- 1. Peel the tomatoes and roughly chop the flesh. Heat the oil in a pot. Sauté the chopped onions, garlic, and bell peppers in it over medium heat for 10 minutes until soft. Then add the chopped tomatoes and let everything simmer for another 10 minutes.
- 2. Add the broth, tomato paste, salt, pepper, and sugar. Let the soup cook covered for 15 minutes. Remove the pot from the heat and stir in the fresh basil. Allow the mixture to cool down. Then puree it in a blender or with an immersion stick until you have a smooth, fine soup.
- 3. Reheat the pureed soup in the pot. Serve it together with the already cooked noodles. For extra creaminess, you can also add a dollop of sour cream on top.
