🍽️ Fresh Tomato Soup

Ingredients
- 1 kg tomato(es)
- 2 onion(s)
- 3 clove(s) of garlic
- olive oil for frying
- 0.75 Liter vegetable broth
- salt and pepper, white
- herb salt
- thyme (dried)
- 3 tsp tomato paste
- parsley
Instructions
- 1. Score a cross into the bottom of the tomatoes.
- 2. Place the tomatoes in a large bowl.
- 3. Pour boiling or very hot water over them.
- 4. Let the tomatoes sit in the water for ten minutes.
- 5. Carefully peel the skin off the tomatoes.
- 6. Remove the hard stem area.
- 7. Cut the peeled tomatoes into small pieces.
- 8. Finely dice the onions.
- 9. Press the garlic.
- 10. Fry the onions and garlic in olive oil.
- 11. Add the tomato pieces after three minutes.
- 12. Add the vegetable broth after a few minutes.
- 13. Add all spices except the parsley.
- 14. Let the soup simmer on low heat for twenty minutes.
- 15. Stir in the tomato paste.
- 16. Puree the soup finely with a hand blender.
- 17. Season the soup to taste with the spices.
- 18. Serve the soup with fresh parsley.
