  1. 1. Score a cross into the bottom of the tomatoes.
  2. 2. Place the tomatoes in a large bowl.
  3. 3. Pour boiling or very hot water over them.
  4. 4. Let the tomatoes sit in the water for ten minutes.
  5. 5. Carefully peel the skin off the tomatoes.
  6. 6. Remove the hard stem area.
  7. 7. Cut the peeled tomatoes into small pieces.
  8. 8. Finely dice the onions.
  9. 9. Press the garlic.
  10. 10. Fry the onions and garlic in olive oil.
  11. 11. Add the tomato pieces after three minutes.
  12. 12. Add the vegetable broth after a few minutes.
  13. 13. Add all spices except the parsley.
  14. 14. Let the soup simmer on low heat for twenty minutes.
  15. 15. Stir in the tomato paste.
  16. 16. Puree the soup finely with a hand blender.
  17. 17. Season the soup to taste with the spices.
  18. 18. Serve the soup with fresh parsley.
