  1. 1. Knead the dough ingredients until smooth and no longer sticky. Grease two 12-cup muffin tins. Divide the dough among the cups, pressing it up the sides to form a small rim.
  2. 2. Clean and wash the peppers and leek, peel the onion. Finely chop everything and sauté in a pan with a little oil for about 5 minutes. Remove half of the vegetables, place them in a bowl, and let them cool.
  3. 3. Drain the sun-dried tomatoes and cut them into small pieces. Dice the ham. Add the tomatoes to the first portion of vegetables and the ham to the second. This way, you will have 12 mini quiches for ham lovers and 12 for vegetarians.
  4. 4. Whisk the filling ingredients together. Divide the filling and vegetables into two halves. Mix one half of the filling with the tomato vegetables and the other half with the ham vegetables. Pour the mixtures into the dough-lined muffin cups.
  5. 5. Bake the quiches in the preheated oven at 180°C (conventional heat) for about 20 to 25 minutes.
  6. 6. These mini quiches are perfect as finger food at parties or as a side dish for a cold buffet.
