  1. 1. Peel the potatoes.
  2. 2. Cut them into evenly sized cubes.
  3. 3. Place the pieces in cold water for a short time.
  4. 4. This rinses out the starch.
  5. 5. Pour oil into a frying pan.
  6. 6. Heat it on the highest setting.
  7. 7. Remove the potatoes from the water.
  8. 8. Drain them in a sieve.
  9. 9. Add them to the hot pan.
  10. 10. Immediately cover the pan with a lid.
  11. 11. Turn the potatoes for the first time after about five minutes.
  12. 12. Then turn them repeatedly in between.
  13. 13. Reduce the heat only if necessary.
  14. 14. Replace the lid after each turn.
  15. 15. The potatoes cook in the steam this way.
  16. 16. Fry them for about 35 minutes.
  17. 17. Add diced onions to the potatoes about 10 minutes before the end of the cooking time.
  18. 18. Do not mix them in.
  19. 19. Fry the onions until they are golden brown.
  20. 20. Season the finished pan-fried potatoes to taste with salt and pepper.
