🍰 Moist Apple Cake

Ingredients
- 150 g butter or margarine
- 125 g sugar
- 3 eggs
- 125 g hazelnuts, ground
- 50 g flour
- 2 tsp baking powder
- 1 tsp cinnamon
- 800 g apples (e.g. Elstar), coarsely grated
- 0.5 cup sugar
- 2 eggs
- 1 lemon, juice from it
- 2 tbsp vanilla pudding powder
- 2 cups sweet cream (each 200 g)
- cocoa powder (for dusting)
Instructions
- 1. Mix butter, sugar, eggs, nuts, flour, baking powder, and cinnamon into a smooth batter. Pour the batter into a greased springform pan.
- 2. Bake the cake in a preheated oven at 160 degrees Celsius with fan for about 30 minutes. You can also bake the cake the day before.
- 3. Bring the grated apples, half a cup of sugar, the two eggs, lemon juice, and pudding powder to a boil while stirring constantly. Let the mixture cool down slightly, then spread it over the cooled cake base in the springform pan and refrigerate.
- 4. Whip the cream until stiff, spread it evenly over the cake, and smooth it out. Finally, dust the cake with a little cocoa powder.
