🍰 Fluffy Baumkuchen with Marzipan

Ingredients
- 250 g Butter or margarine
- 250 g Sugar
- 1 packet Vanilla sugar
- 6 Egg(s), separated
- 150 g Flour
- 100 g Cornstarch
- 3 tsp Baking powder
- 100 g Marzipan
- Bitter almond flavoring
- 3 tbsp Amaretto
- Dark chocolate coating
Instructions
- 1. Beat butter, sugar, egg yolks, vanilla sugar, and bitter almond extract vigorously until the mixture is light and fluffy.
- 2. Warm up the marzipan with three tablespoons of Amaretto liqueur and stir until smooth.
- 3. Add the marzipan mixture to the batter and mix well.
- 4. Add flour, cornstarch (a fine starch made from potatoes), and baking powder spoonful by spoonful.
- 5. Beat the egg whites until very stiff and gently fold them into the batter.
- 6. Set the oven to the lowest setting of the grill mode.
- 7. Line the bottom of a springform pan (a cake pan with a removable side) with baking paper and spread about three tablespoons of batter on it.
- 8. Bake the layer in the preheated oven on the lowest rack for about three minutes until golden brown.
- 9. Then spread another three tablespoons of batter on top and grill for another three minutes.
- 10. Continue this process until all the batter is used up.
- 11. Keep a close eye on the cake to ensure it does not become too dark.
- 12. Release the cooled cake from the sides of the pan and cover it with milk chocolate coating (melted milk chocolate).
