🍽️ Salmon Quiche

Ingredients
- 200 g wheat flour
- 100 g butter, soft
- 1 egg
- 2 tbsp milk
- 1 pinch salt
- butter for the pan
- 300 g smoked salmon (in thin slices)
- 750 g leek
- 2 tbsp butter (for frying)
- 4 eggs
- 6 tbsp crème fraîche
- 0.5 tsp salt and pepper, white
- 1 pinch nutmeg
- 1 tsp lemon juice
Instructions
- 1. Prepare a 26-centimeter springform pan or a tart pan.
- 2. Knead flour, butter, egg, milk, and salt into a smooth dough. Shape the dough into a ball, wrap it in plastic wrap, and let it rest in the refrigerator for about 30 minutes.
- 3. Clean the leek and cut it into wide rings. Sauté the rings for about 6 minutes in heated butter, then let them cool down.
- 4. Cut the salmon into thin strips. Whisk the eggs with crème fraîche, fold in the leek and salmon, and season the mixture with salt, pepper, nutmeg, and lemon juice. Line the pan with the dough and pour in the vegetable-egg mixture.
- 5. Bake the quiche in the preheated oven at 200 degrees Celsius with top and bottom heat for about 30 to 35 minutes.
