  1. 1. Put the flour into a large bowl and sift it there.
  2. 2. Mix the salt into the sifted flour.
  3. 3. Heat the water and melt the butter in it.
  4. 4. Add the cold milk to the lukewarm water and butter mixture.
  5. 5. Dissolve the yeast in this liquid.
  6. 6. Pour the yeast liquid over the flour mixture.
  7. 7. Knead everything into a medium-firm dough.
  8. 8. Cover the bowl.
  9. 9. Let the dough rise for about 45 minutes until it has doubled in size.
  10. 10. Take the finished dough out of the bowl.
  11. 11. Shape the dough into a long roll.
  12. 12. Cut off 24 equal pieces from the roll.
  13. 13. Bring the water for the lye in a pot with at least 20 cm diameter to a boil.
  14. 14. Stir the household soda into the boiling water.
  15. 15. Watch out, as the mixture foams slightly.
  16. 16. Roll out the dough pieces into long shapes.
  17. 17. Roll the dough pieces into sticks.
  18. 18. Place the finished sticks in pairs into the slightly boiling water.
  19. 19. Remove the sticks as soon as they float to the top.
  20. 20. This process takes about 5 seconds.
  21. 21. Place the sticks on a baking sheet lined with baking paper.
  22. 22. Repeat the process until all sticks have been in the lye.

  28. 28. Preheat the oven to 160 degrees convection.
  29. 29. Bake the sheets for about 25 minutes.
  30. 30. Place the finished sticks on a rack to cool.
  31. 31. For a variation, place about 1 tablespoon of raw ham cubes on one end of the dough.
