🍽️ Classic Onion Soup with Cheese Crust

Ingredients
- 500 g onion(s)
- 1 tbsp butter
- 800 ml vegetable broth
- 150 ml white wine
- 4 slice(s) toast bread
- 4 tbsp Gouda (grated)
- 4 tbsp Parmesan, grated
- salt and pepper
Instructions
- 1. Peel the onions and slice them into thin rings. Place them in a pot with the butter and cook until soft over medium heat. Deglaze the pot with the wine and add the broth. Let the soup simmer gently for about 15 minutes.
- 2. Cut toast slices into the shape of your soup bowls. Toast them in a toaster or in the oven until golden brown.
- 3. Fill the soup into the bowls and place one toasted toast slice on top of each. Sprinkle generously with Gouda and Parmesan cheese. Place the bowls in the oven and broil briefly until the cheese is melted and has a nice color.
- 4. Place the hot soup bowl on a saucer. Be careful, as the bowl and soup are extremely hot. You can easily burn your fingers on the rim or scald your mouth with the hot soup.
