🍽️ Creamy Low-Carb Cauliflower Mash

Ingredients
- 500 g cauliflower
- 4 tbsp double cream cheese
- 1 tbsp butter (or cream)
- salt and pepper
- nutmeg to taste
Instructions
- 1. Wash the cauliflower and break it into small florets.
- 2. Fill a bowl with water and add plenty of salt.
- 3. Place the cauliflower florets in the salted water for 30 minutes.
- 4. Remove the cauliflower from the water and rinse it briefly.
- 5. Bring a pot of fresh salted water to a boil.
- 6. Add the florets to the boiling water and cook them for 15 minutes.
- 7. Check if the cauliflower is tender, then drain the water completely.
- 8. Let the cauliflower drain briefly so no moisture remains.
- 9. Puree the hot vegetable with a hand blender until smooth.
- 10. Stir butter and cream cheese into the mash.
- 11. Season the mash with salt and pepper to your liking.
- 12. Add a pinch of nutmeg if you like.
- 13. Serve the mash warm, for example with steak and salad.
- 14. Add more cream cheese if you prefer a creamier texture.
