  1. 1. Put the sun-dried tomatoes and five tablespoons of oil into a blender.
  2. 2. Blend the mixture until it forms a smooth paste.
  3. 3. Season the paste with black pepper, finely chopped garlic, chopped basil, and oregano to your taste.
  4. 4. Store the finished paste in a sealed container in the refrigerator for up to two weeks.
  5. 5. Butter the pork fillets lengthwise, cutting almost all the way through so they open like a book.
  6. 6. Season the meat with salt and pepper.
  7. 7. Place basil leaves inside the opening of the meat.
  8. 8. Mix the Grana Padano cheese with the tomato pesto.
  9. 9. Spread the cheese and pesto mixture evenly over the basil leaves.
  10. 10. Close the fillets back together.
  11. 11. Wrap the rolls tightly in slices of Parma ham.
  12. 12. Brush the rolls with olive oil.
  13. 13. Place the rolls in a baking dish.
  14. 14. Preheat the oven to 190 degrees Celsius (top and bottom heat).
  15. 15. Roast the meat rolls in the preheated oven for about 30 minutes.
  16. 16. Remove the meat from the oven.
  17. 17. Let the meat rest for ten minutes.
  18. 18. Slice the fillets into thick pieces.
  19. 19. Serve the slices on a plate.
  20. 20. Serve rosemary potatoes as a side dish.
