🍽️ Juicy Pork Fillet Rolls with Pesto and Ham

Ingredients
- 2 Pork tenderloin(s)
- 1 bunch Basil
- 3 tbsp Italian hard cheese (such as Parmesan or Grana Padano)
- 10 slice(s) Parma ham
- 2 tbsp Olive oil
- 200 g Tomato(es), dried in oil
- 5 tbsp Olive oil
- 1 Garlic clove(s) (chopped)
- 1 pinch(es) Oregano
- 5 Basil leaves (fresh)
- Pepper
Instructions
- 1. Put the sun-dried tomatoes and five tablespoons of oil into a blender.
- 2. Blend the mixture until it forms a smooth paste.
- 3. Season the paste with black pepper, finely chopped garlic, chopped basil, and oregano to your taste.
- 4. Store the finished paste in a sealed container in the refrigerator for up to two weeks.
- 5. Butter the pork fillets lengthwise, cutting almost all the way through so they open like a book.
- 6. Season the meat with salt and pepper.
- 7. Place basil leaves inside the opening of the meat.
- 8. Mix the Grana Padano cheese with the tomato pesto.
- 9. Spread the cheese and pesto mixture evenly over the basil leaves.
- 10. Close the fillets back together.
- 11. Wrap the rolls tightly in slices of Parma ham.
- 12. Brush the rolls with olive oil.
- 13. Place the rolls in a baking dish.
- 14. Preheat the oven to 190 degrees Celsius (top and bottom heat).
- 15. Roast the meat rolls in the preheated oven for about 30 minutes.
- 16. Remove the meat from the oven.
- 17. Let the meat rest for ten minutes.
- 18. Slice the fillets into thick pieces.
- 19. Serve the slices on a plate.
- 20. Serve rosemary potatoes as a side dish.
