🍽️ Classic Viennese Bread Dumplings

Ingredients
- 5 bread rolls (stale, approx. 270 g)
- 250 ml milk
- 1 egg
- salt
- 1 large onion (finely chopped)
- 1 bunch parsley (finely chopped)
- 70 g butter
- 50 g flour (all-purpose)
Instructions
- 1. Cut the bread rolls into cubes of about 1 cm.
- 2. Whisk the eggs with a little salt and milk to create a liquid.
- 3. Pour the egg and milk mixture over the bread cubes.
- 4. Mix everything well.
- 5. Let the mixture soak for a while.
- 6. Fry the onions in butter until golden brown.
- 7. Fold the fried onions into the bread mixture.
- 8. Add some fresh butter to the mixture.
- 9. Add chopped parsley to the mixture.
- 10. Gently mix the flour into the mixture.
- 11. Wet your hands with water.
- 12. Shape the dumplings into round balls with your wet hands.
- 13. Bring salted water to a light boil.
- 14. Optionally add some cornstarch to the cooking water so the dumplings do not fall apart.
- 15. Simmer the dumplings for 15 minutes in the lightly boiling salted water.
- 16. Do not cover the pot while cooking.
- 17. Take some cooking water out.
- 18. Use the cooking water to make a delicious soup or to pour over vegetables.
