Ingredients
- 200 g flour
- 2 tbsp oil
- 125 ml water
- 1 tsp, level salt
- fats for the baking sheet
- 200 g crème double (or crème fraîche)
- 200 g onion(s)
- 200 g soft goat cheese
- 3 tbsp rosemary (fresh, finely chopped)
- 2 tbsp honey, liquid
Instructions
- 1. Knead flour, oil, water, and salt into a soft dough that no longer sticks to your fingers. Add a little more flour if necessary. Roll the dough thinly onto a greased baking sheet.
- 2. Lightly salt the Crème Double and spread it over the dough. Slice the onions into very thin rings and distribute them on top. Place thin slices of goat cheese on the dough and sprinkle fresh rosemary over it. If using dried rosemary, use sparingly as it is very potent.
- 3. Bake the Flammkuchen at the highest heat setting (250 °C) for 15 to 20 minutes. It is done when the crust is golden brown and the cheese is melting.
- 4. After baking, drizzle liquid honey over the cheese in a thin stream or serve it on the side. Enjoy the Flammkuchen best while it is still hot.
