🍽️ Cabbage Rolls with Cumin Potatoes

Ingredients
- 1 small white cabbage
- 1 tsp cumin
- 600 g minced meat
- 1 small onion(s) (in cubes)
- 1 clove(s) garlic (in cubes)
- 1 medium-sized egg(s)
- 2 tbsp breadcrumbs (or 1 slice toast bread)
- 1 tsp mustard
- 1 tbsp parsley (finely chopped)
- salt and pepper
- cayenne pepper
- 1 tbsp ghee
- onion(s)
- 1 tbsp tomato paste
- 300 ml broth
- 100 ml roast jus
- 400 g potato(es) (small)
- 1 tbsp cumin
- 1 tbsp butter
- nutmeg
Instructions
- 1. Cut the hard core out of the savoy cabbage.
- 2. Place the whole cabbage in a large pot with water, salt, and cumin.
- 3. Blanch the cabbage briefly in the boiling water.
- 4. Peel off the leaves one by one.
- 5. Plunge the leaves immediately into ice water to keep them fresh.
- 6. Pat the leaves dry.
- 7. Remove the hard midrib from each leaf.
- 8. Mix the minced meat, onion, garlic, egg, mustard, parsley, and the finely crumbled toast slices in a bowl.
- 9. Season the meat mixture with salt, pepper, and cayenne pepper.
- 10. Place two to three cabbage leaves on top of each other so that they slightly overlap.
- 11. Distribute the meat portions on the leaves.
- 12. Roll the rolls once.
- 13. Fold in the side edges.
- 14. Roll the rolls completely to the end.
- 15. Secure the rolls with kitchen twine or roll clips.
- 16. Fry the rolls in a deep pan with a lid or a casserole dish on all sides in clarified butter.
- 17. Add the onions and fry them briefly.
- 18. Remove the rolls briefly from the pan.
- 19. Stir the tomato paste into the onions.
- 20. Roast the tomato paste briefly.
- 21. Deglaze the pan with broth and meat jus.
- 22. Return the rolls to the pot.
- 23. Close the lid.
- 24. Let the rolls simmer for about 30 minutes.
- 25. Turn the rolls in between.
- 26. Reduce the sauce if necessary.
- 27. Season the sauce.
- 28. Thicken the sauce with starch if needed.
- 29. Wash the potatoes.
- 30. Boil the potatoes in salted water with cumin.
- 31. Let the potatoes cool slightly.
- 32. Peel the potatoes.
- 33. Toss the potatoes in butter.
- 34. Season the potatoes with nutmeg.
- 35. Plate the dish.
- 36. Remove the kitchen twine from the rolls.
- 37. Place the rolls on a plate.
- 38. Cover the rolls with the meat sauce.
- 39. Serve the potatoes alongside.
