🍽️ Fish in Paper Packets

Ingredients
- 4 medium-sized fish fillets (cod, redfish or similar)
- 6 small tomatoes
- 250 g feta cheese (mild)
- 50 ml olive oil
- 2 tbsp thyme (dried)
- salt and pepper
- garlic
Instructions
- 1. Take two large sheets of baking paper. They should be as big as a full baking tray.
- 2. Place two fish fillets side by side in the center of one sheet.
- 3. Season the fish generously with salt and pepper.
- 4. Cut the tomatoes into eighths.
- 5. Place the tomato pieces on top of the fish.
- 6. Cut the feta cheese into small cubes.
- 7. Scatter the cheese cubes over the fish and tomatoes.
- 8. Finely chop the garlic.
- 9. Sprinkle the garlic over everything.
- 10. Drizzle the oil evenly over the ingredients.
- 11. Sprinkle each packet with one tablespoon of thyme.
- 12. Repeat steps 1 to 11 for the second paper packet.
- 13. Fold the edges of the paper upwards.
- 14. Seal the packets tightly by folding the edges together.
- 15. Secure the packets with a kitchen toothpick if necessary.
- 16. Place the packets on a baking tray.
- 17. Preheat the oven to 320 degrees Fahrenheit (200 degrees Celsius) using top and bottom heat.
- 18. Bake the packets for about 30 minutes.
- 19. Serve the dish best with rice.
- 20. For a complete meal, you can add the following ingredients: sliced zucchini, rosemary, dill, steamed potato slices, lemon slices, and rustic country bread.
