  1. 1. Take two large sheets of baking paper. They should be as big as a full baking tray.
  2. 2. Place two fish fillets side by side in the center of one sheet.
  3. 3. Season the fish generously with salt and pepper.
  4. 4. Cut the tomatoes into eighths.
  5. 5. Place the tomato pieces on top of the fish.
  6. 6. Cut the feta cheese into small cubes.
  7. 7. Scatter the cheese cubes over the fish and tomatoes.
  8. 8. Finely chop the garlic.
  9. 9. Sprinkle the garlic over everything.
  10. 10. Drizzle the oil evenly over the ingredients.
  11. 11. Sprinkle each packet with one tablespoon of thyme.
  12. 12. Repeat steps 1 to 11 for the second paper packet.
  13. 13. Fold the edges of the paper upwards.
  14. 14. Seal the packets tightly by folding the edges together.
  15. 15. Secure the packets with a kitchen toothpick if necessary.
  16. 16. Place the packets on a baking tray.
  17. 17. Preheat the oven to 320 degrees Fahrenheit (200 degrees Celsius) using top and bottom heat.
  18. 18. Bake the packets for about 30 minutes.
  19. 19. Serve the dish best with rice.
  20. 20. For a complete meal, you can add the following ingredients: sliced zucchini, rosemary, dill, steamed potato slices, lemon slices, and rustic country bread.
