🥤 Super Juicy Oven-Baked Meatloaf

Ingredients
- 1.5 Bread rolls (stale)
- 2 Pickles
- 2 small Onion(s)
- 1 small bunch Parsley
- 2 tbsp Lemon juice
- 50 g butter
- 600 g Minced meat, mixed
- 2 small Egg(s)
- 125 ml Meat broth
- 125 ml Cream
- 1 tbsp Crème fraîche
- 1 tsp Paprika powder, sweet
- Salt and pepper, black
- Cayenne pepper
- Fat for the pan
Instructions
- 1. Slice the bread rolls, pour water over them and let them soak. Squeeze them out well afterwards. Cut the gherkins and onions into very small cubes.
- 2. Heat one tablespoon of butter and sweat the onions in it until translucent. Add the parsley.
- 3. Put the onion-parsley mixture into a bowl. Add the bread, gherkins, minced meat, eggs and lemon juice. Season everything with salt, cayenne pepper and black pepper and knead the mixture thoroughly.
- 4. Melt the remaining butter and grease a baking dish with it. Shape the meat mixture into a loaf and place it in the dish. Bake it on the lower rack for 30 minutes at 180 degrees fan-forced, basting it repeatedly with the melted butter during this time.
- 5. Heat the meat broth and stir in cream, crème fraîche and paprika powder. (If you like a lot of sauce, you can simply double the amount). Pour the sauce over the meatloaf and let it cook for another 10 to 15 minutes.
- 6. Boiled potatoes with salt go perfectly with this.
