  1. 1. Peel the apples.
  2. 2. Cut the peeled apples into eight wedges.
  3. 3. Remove the core from the apple wedges.
  4. 4. Put two level tablespoons of sugar into a saucepan.
  5. 5. Melt the sugar over medium heat until it caramelizes.
  6. 6. Wait about two minutes for the caramelization process.
  7. 7. Add the prepared apple wedges to the pot.
  8. 8. Stir the apple wedges vigorously.
  9. 9. Continue stirring until the caramelized sugar releases from the bottom of the pan.
  10. 10. This process takes about one to two minutes.
  11. 11. Pour 0.25 liters of apple juice into the pot.
  12. 12. Cover the pot with a lid.
  13. 13. Cook the apples until they are completely soft.
  14. 14. Remove the pot from the heat.
  15. 15. Mash the cooked apples into a puree using a potato masher.
  16. 16. Add a little extra apple juice if desired.
  17. 17. Stir in the apple juice to achieve the desired consistency.
  18. 18. Season the applesauce with sugar to taste.
  19. 19. Add lemon juice and adjust the seasoning.
  20. 20. Sprinkle some cinnamon over it and mix everything well.
