Ingredients
- 2 kg apples
- 2 tbsp, level sugar
- 0.25 Liter apple juice
- some lemon juice
- cinnamon (ground)
Instructions
- 1. Peel the apples.
- 2. Cut the peeled apples into eight wedges.
- 3. Remove the core from the apple wedges.
- 4. Put two level tablespoons of sugar into a saucepan.
- 5. Melt the sugar over medium heat until it caramelizes.
- 6. Wait about two minutes for the caramelization process.
- 7. Add the prepared apple wedges to the pot.
- 8. Stir the apple wedges vigorously.
- 9. Continue stirring until the caramelized sugar releases from the bottom of the pan.
- 10. This process takes about one to two minutes.
- 11. Pour 0.25 liters of apple juice into the pot.
- 12. Cover the pot with a lid.
- 13. Cook the apples until they are completely soft.
- 14. Remove the pot from the heat.
- 15. Mash the cooked apples into a puree using a potato masher.
- 16. Add a little extra apple juice if desired.
- 17. Stir in the apple juice to achieve the desired consistency.
- 18. Season the applesauce with sugar to taste.
- 19. Add lemon juice and adjust the seasoning.
- 20. Sprinkle some cinnamon over it and mix everything well.
