Ingredients
- 500 g wheat flour Type 405
- 300 ml water
- 2 tsp salt
- 5 g fresh yeast
- 1 can pizza tomatoes
- salt and pepper
- a little sugar
- basil
- oregano
Instructions
- 1. I searched, tested, and tried for a long time to find this perfect dough. It tastes authentic and delicious, just like in Italy.
- 2. Sift the flour with the salt and put it into a food processor or a bread machine with dough function. Dissolve the yeast in the lukewarm water and add it to the flour. Note: This refers to fresh yeast.
- 3. Knead the ingredients for 20 minutes to form an elastic, smooth dough. An electric machine is very helpful here, as the dough would otherwise remain too hard. A hand mixer with dough hooks also works well.
- 4. Cover the dough with a damp cloth and let it rest for two hours. Then divide it into four 200-gram pieces, form balls, and let them rise covered for another six hours. The secret is the long kneading and the short rising time with little yeast.
