  2. 2. Sift the flour with the salt and put it into a food processor or a bread machine with dough function. Dissolve the yeast in the lukewarm water and add it to the flour. Note: This refers to fresh yeast.
  3. 3. Knead the ingredients for 20 minutes to form an elastic, smooth dough. An electric machine is very helpful here, as the dough would otherwise remain too hard. A hand mixer with dough hooks also works well.
  4. 4. Cover the dough with a damp cloth and let it rest for two hours. Then divide it into four 200-gram pieces, form balls, and let them rise covered for another six hours. The secret is the long kneading and the short rising time with little yeast.
