Ingredients
- 1 onion (diced)
- 1 garlic clove (pressed)
- 4 tbsp olive oil
- 2 zucchini (approx. 350 g)
- 125 g rice
- 600 ml vegetable broth
- 100 g tomato paste
- salt and pepper
- thyme
- 200 g feta cheese (diced)
Instructions
- 1. Dice the onion into small cubes.
- 2. Press the garlic.
- 3. Wash the zucchini.
- 4. Cut the zucchini into quarters.
- 5. Slice the zucchini quarters into thin pieces.
- 6. Heat the olive oil in a large pan.
- 7. Sauté the onions in the hot oil.
- 8. Add the zucchini and garlic to the pan.
- 9. Cook the vegetables for a few minutes.
- 10. Add the uncooked rice to the pan.
- 11. Fry the rice briefly.
- 12. Whisk the tomato paste into the vegetable broth.
- 13. Deglaze the rice with the tomato paste and broth mixture.
- 14. Bring the mixture to a boil.
- 15. Season the dish with salt.
- 16. Season the dish with pepper.
- 17. Season the dish with thyme.
- 18. Simmer the dish on low heat for about 20 minutes.
- 19. Stir the dish occasionally.
- 20. Check if the rice is tender and has absorbed the liquid.
- 21. Add a little more vegetable broth if needed.
- 22. Fold in the diced feta cheese just before serving.
- 23. Let the feta cheese melt slightly in the dish.
