  1. 1. Heat the clarified butter in a deep pan. Sear the meat on high heat and season with salt, pepper, and paprika powder.
  2. 2. Once the meat has browned and the water has evaporated, add the chopped onion, pressed garlic clove, grated carrot, mustard, and tomato paste, and sauté briefly.
  3. 3. Deglaze with beer and let it reduce. Top up with vegetable broth, cover, and simmer for about 1 hour (about 35 minutes if using a pressure cooker).
  4. 4. About 5 minutes before the end of cooking time, stir in the crème fraîche and thicken with a little sauce thickener if needed. Taste again before serving.
  5. 5. Serve with spätzle, rice, mashed potatoes, or boiled potatoes.
