  4. 4. If necessary, add a little more flour.
  5. 5. Let the dough rest in a quiet place for at least 30 minutes.
  6. 6. Stir the crème fraîche (a sour cream) until smooth.
  7. 7. Season the cream with salt, pepper, and a pinch of nutmeg.
  8. 8. Peel the onion.
  9. 9. Halve the onion.
  10. 10. Slice the onion into thin strips.
  11. 11. Lightly dust a work surface with flour.
  12. 12. Roll the dough very thin with a rolling pin.
  13. 13. Place the dough on a baking sheet or a baking stone.
  14. 14. Spread the crème fraîche mixture over the dough.
  15. 15. Distribute the onion strips evenly on top.
  16. 16. Spread the bacon over it.
  17. 17. Preheat the oven to at least 200 °C top and bottom heat.
  18. 18. Bake the tarte flambée for about 20 minutes.
