🍽️ Easy Homemade Spätzle or Knöpfli

Ingredients
- 500 g flour
- 6 egg(s)
- 200 ml milk
- 20 g butter (melted)
- salt
Instructions
- 1. Put the flour into a large bowl.
- 2. Press a small indentation into the center of the flour.
- 3. Add the eggs, the milk, the salt, and the cooled, melted butter into the indentation.
- 4. Stir the ingredients vigorously with a wooden spoon or the dough hooks of a mixer.
- 5. Continue stirring until a thick and sticky dough forms.
- 6. Let the dough rest for 5 to 10 minutes.
- 7. Bring water to a boil in a large pot.
- 8. Salt the boiling water.
- 9. Choose a preparation method: a spätzle maker, a spätzle scoop, or two tablespoons.
- 10. If using a spätzle maker, attach it and press the dough through the holes into the water with a scraper.
- 11. If using a spätzle scoop (a spoon with holes), do not fill it too full so the dough does not overflow.
- 12. If using two tablespoons, shape small dumplings from the dough and put them into the water.
- 13. Cook the spätzle until they float to the surface.
- 14. Remove the cooked spätzle with a slotted spoon.
- 15. Repeat the cooking in several batches to prevent the dough from sticking to the already cooked spätzle.
- 16. Rinse the spätzle maker and other utensils immediately with cold water, as the dough is sticky.
- 17. Let dirty parts soak if you cannot wash them immediately.
- 18. Serve the spätzle with sauce, for example as cheese spätzle with fried onions.
- 19. This recipe serves as a side dish for 6 people or as a main course for 4 people.
