🍽️ Grilled Lamb Skewers with Apricots

Ingredients
- 0.5 cinnamon stick(s)
- 2 tsp cumin
- 0.5 bunch mint (fresh)
- 1 chili pepper(s) (red)
- 1 garlic clove(s)
- 8 tbsp olive oil
- 600 g lamb loin
- 8 apricot(s)
- sea salt and pepper (white)
Instructions
- 1. Crush the cinnamon stick and cumin seeds in a mortar.
- 2. Finely chop the mint and chili pepper.
- 3. Peel the garlic and slice it thinly.
- 4. Mix everything with the oil.
- 5. Cut the meat into small cubes.
- 6. Toss the meat with the marinade.
- 7. Let the skewers marinate for at least four hours, preferably overnight.
- 8. Halve the apricots and remove the pits.
- 9. Take the meat out of the marinade.
- 10. Thread the meat onto the skewers, alternating with the apricot halves.
- 11. Grill the skewers, turning them frequently, for 6 to 10 minutes.
- 12. Alternatively, you can cook the skewers in a pan.
- 13. Sear them vigorously on both sides for 1 to 2 minutes each.
- 14. Then place them on a plate.
- 15. Let them finish cooking in the oven preheated to 80 degrees Celsius for another 15 minutes.
- 16. Season the finished skewers with sea salt and freshly ground pepper.
- 17. Tip: You can substitute the apricots with fresh figs.
