  1. 1. Wash the tomatoes thoroughly.
  2. 2. Cut a small cross into the bottom of each tomato.
  3. 3. Bring water to a boil and add some salt and optionally a splash of oil.
  4. 4. Dip the tomatoes briefly into the boiling water.
  5. 5. Remove the tomatoes as soon as the skin loosens at the cuts.
  6. 6. Let the tomatoes cool down.
  7. 7. Carefully peel off the loosened skin.
  8. 8. Halve the peeled tomatoes.
  9. 9. Remove the seeds and the watery pulp.
  10. 10. Cut the firm flesh into small cubes.
  11. 11. Place the tomato cubes in a sieve.
  12. 12. Press gently to drain excess liquid.
  13. 13. Place the drained tomatoes in a bowl.
  14. 14. Finely chop the basil, onions, and garlic.
  15. 15. Add the chopped vegetables and herbs to the tomatoes.
  16. 16. Moisten the mixture with a splash of olive oil.
  17. 17. Season the tomato mixture to taste.
  18. 18. Stir everything gently.
  19. 19. Place balsamic vinegar and red wine in a pot.
  20. 20. Cook the liquid under constant stirring until it reduces.
  21. 21. Add orange juice and honey to the reduced liquid.
  22. 22. Continue cooking until the sauce is thick.
  23. 23. Let the sauce cool down.
  24. 24. Cut the baguette into 2 cm thick slices.
  25. 25. Heat olive oil in a pan.
  26. 26. Fry the baguette slices in the hot oil until golden brown.
  27. 27. Fry the slices on both sides.
  28. 28. Quickly top the warm slices with the tomato mixture.
  29. 29. Arrange the bruschetta on a plate.
  30. 30. Drizzle the bruschetta with the cooled balsamic sauce.
  31. 31. Sprinkle grated Parmesan over it.
  32. 32. Garnish optionally with a fresh basil leaf.
  33. 33. Enjoy the result, even though preparation takes a bit longer.
