🍽️ Classic Italian Bruschetta

Ingredients
- 10 large tomato(es) (fresh)
- 1 onion(s)
- 1 clove(s) garlic (finely chopped)
- 1 large baguette(s) (or ciabatta)
- some parmesan
- 1 bunch basil (finely chopped)
- some olive oil
- some oregano
- 50 ml balsamic vinegar
- 50 ml red wine
- 50 ml orange juice
- 2 tbsp honey
- salt and pepper
- 1 pinch(es) allspice powder
- optional chili powder
Instructions
- 1. Wash the tomatoes thoroughly.
- 2. Cut a small cross into the bottom of each tomato.
- 3. Bring water to a boil and add some salt and optionally a splash of oil.
- 4. Dip the tomatoes briefly into the boiling water.
- 5. Remove the tomatoes as soon as the skin loosens at the cuts.
- 6. Let the tomatoes cool down.
- 7. Carefully peel off the loosened skin.
- 8. Halve the peeled tomatoes.
- 9. Remove the seeds and the watery pulp.
- 10. Cut the firm flesh into small cubes.
- 11. Place the tomato cubes in a sieve.
- 12. Press gently to drain excess liquid.
- 13. Place the drained tomatoes in a bowl.
- 14. Finely chop the basil, onions, and garlic.
- 15. Add the chopped vegetables and herbs to the tomatoes.
- 16. Moisten the mixture with a splash of olive oil.
- 17. Season the tomato mixture to taste.
- 18. Stir everything gently.
- 19. Place balsamic vinegar and red wine in a pot.
- 20. Cook the liquid under constant stirring until it reduces.
- 21. Add orange juice and honey to the reduced liquid.
- 22. Continue cooking until the sauce is thick.
- 23. Let the sauce cool down.
- 24. Cut the baguette into 2 cm thick slices.
- 25. Heat olive oil in a pan.
- 26. Fry the baguette slices in the hot oil until golden brown.
- 27. Fry the slices on both sides.
- 28. Quickly top the warm slices with the tomato mixture.
- 29. Arrange the bruschetta on a plate.
- 30. Drizzle the bruschetta with the cooled balsamic sauce.
- 31. Sprinkle grated Parmesan over it.
- 32. Garnish optionally with a fresh basil leaf.
- 33. Enjoy the result, even though preparation takes a bit longer.
