  1. 1. Finely chop the onions.
  2. 2. Heat plenty of olive oil in a large pan over medium heat.
  3. 3. Sweat the onions in the oil until they are soft and translucent.
  4. 4. Add the minced meat to the pan.
  5. 5. Fry the meat until it breaks into small crumbles.
  6. 6. Peel the garlic.
  7. 7. Crush the garlic using the flat side of a knife.
  8. 8. Add the crushed garlic to the meat.
  9. 9. Add the canned tomatoes including their juice to the pan.
  10. 10. Crush the tomatoes in the pan with a spoon.
  11. 11. Season the mixture with the spices and chili peppers (including seeds).
  12. 12. Let everything simmer for about 20 minutes over medium to high heat.
  13. 13. Remove the seeds and white pith from the bell peppers.
  14. 14. Cut the bell peppers into small cubes.
  15. 15. Add the pepper cubes to the pan.
  16. 16. Chop the chocolate finely.
  17. 17. Add the chocolate pieces to the pan.
  18. 18. Stir all ingredients well until they combine.
  19. 19. Simmer the chili for another 10 minutes.
  20. 20. Add the kidney beans, corn, and peas to the pan.
  21. 21. Simmer the dish for another 10 minutes.
  22. 22. Season the chili again with the spices.
  23. 23. Serve the chili hot.
  24. 24. Serve the chili with bread and sour cream (or a similar cream).
  25. 25. Note: Bread and sour cream help reduce the spiciness.
  26. 26. Skip the sour cream if you prefer it very spicy.
