Ingredients
- 2.5 kg roast beef
- 100 g clarified butter
- salt and pepper
Instructions
- 1. Generously rub the roast beef with salt and pepper.
- 2. Heat clarified butter in a frying pan.
- 3. Sear the meat on all sides until it has a dark crust.
- 4. Let the meat cook in the pan for a total of 20 minutes.
- 5. Set the oven to 80 degrees Celsius with top and bottom heat.
- 6. Place a drip tray on the lowest rack of the oven.
- 7. Place an oven rack on the middle rack position.
- 8. Place the seared roast beef on the rack.
- 9. Put the meat in the oven for 5 to 6 hours.
- 10. Remove the roast beef from the oven after the cooking time.
- 11. Let the meat rest briefly before you slice it.
- 12. Prepare a sauce using store-bought gravy or red wine.
- 13. Serve the roast beef with sides like gratin, salad, or vegetables.
