  1. 1. Wash the fresh tomatoes thoroughly.
  2. 2. Dice the tomatoes and remove the core.
  3. 3. Peel the onions and dice them as well.
  4. 4. Peel the garlic and crush it.
  5. 5. Heat the olive oil in a pot.
  6. 6. Make sure the oil does not get too hot so that the onions do not brown too quickly.
  7. 7. Add the onions to the oil and sweat them until they are translucent.
  8. 8. Add the diced tomatoes.
  9. 9. Deglaze the tomatoes with a little water.
  10. 10. Stir in sugar, salt, and pepper.
  11. 11. Let the sauce simmer gently covered for about 20 minutes.
  12. 12. Then puree the sauce with an immersion blender.
  13. 13. Return the pureed sauce to a pot.
  14. 14. Add the crushed garlic.
  15. 15. Simmer the sauce over low heat for about 1 to 2 hours.
  16. 16. Thin the sauce with a little water if it becomes too thick.
  17. 17. Season the sauce with salt and pepper to taste.
  18. 18. Add the fresh basil.
  19. 19. Serve the sauce with your favorite pasta.
