🍽️ Sicilian Tomato Sauce - Family Recipe

Ingredients
- 10 large tomato(es) (or 2 large cans tomatoes)
- 1 small onion(s)
- 1 clove(s) garlic
- 1 pinch(es) sugar
- 1 tbsp olive oil
- to taste salt and pepper
- 3 basil leaf(es)
Instructions
- 1. Wash the fresh tomatoes thoroughly.
- 2. Dice the tomatoes and remove the core.
- 3. Peel the onions and dice them as well.
- 4. Peel the garlic and crush it.
- 5. Heat the olive oil in a pot.
- 6. Make sure the oil does not get too hot so that the onions do not brown too quickly.
- 7. Add the onions to the oil and sweat them until they are translucent.
- 8. Add the diced tomatoes.
- 9. Deglaze the tomatoes with a little water.
- 10. Stir in sugar, salt, and pepper.
- 11. Let the sauce simmer gently covered for about 20 minutes.
- 12. Then puree the sauce with an immersion blender.
- 13. Return the pureed sauce to a pot.
- 14. Add the crushed garlic.
- 15. Simmer the sauce over low heat for about 1 to 2 hours.
- 16. Thin the sauce with a little water if it becomes too thick.
- 17. Season the sauce with salt and pepper to taste.
- 18. Add the fresh basil.
- 19. Serve the sauce with your favorite pasta.
