Ingredients
- 2 egg yolks
- 1 tbsp lemon juice
- 1 tsp Dijon mustard
- 1 tbsp crème fraîche
- 1 tsp sugar
- 150 g butter
- 1 tsp tarragon (dried)
- salt and pepper
Instructions
- 1. Place the egg yolks, lemon juice, dried tarragon, mustard, a pinch of salt, sugar, and crème fraîche into a tall container.
- 2. Mix the ingredients well with an immersion blender until combined.
- 3. Bring the butter to a brief boil in a saucepan.
- 4. Slowly pour the hot butter into the container with the egg yolk mixture.
- 5. Keep the immersion blender running while pouring to ensure the sauce becomes creamy.
- 6. Season the finished sauce with salt and pepper to taste.
- 7. Omit the tarragon and mustard if you prefer to make a classic Hollandaise sauce instead.
- 8. The result will be a delicious sauce either way.
