🍽️ GDR Soljanka: Hearty Meat Stew

Ingredients
- 2 kg Kasseler (or schnitzel meat (pork), cut into small pieces)
- 350 g meat sausage (or game sausage, cut into cubes)
- 4 large onion(s) (finely chopped)
- 2 jars pickled cucumber(s) (finely chopped)
- 2 jars Letscho
- 300 g cherry tomato(es) (diced)
- 1 container crème fraîche (or sour cream)
- salt and pepper
- to taste ketchup (for thickening)
- paprika powder, sweet
- oil
Instructions
- 1. Heat some oil in a large pan.
- 2. Sear the meat until it is brown.
- 3. Season the meat with salt, pepper, and paprika powder.
- 4. Add the sliced game sausage and onions to the pan.
- 5. Transfer the entire contents of the pan into a large cooking pot.
- 6. Add the diced cucumbers and tomatoes to the pot.
- 7. Deglaze the vegetables with two glasses of Letscho (a sweet-sour tomato and cucumber canned stew).
- 8. Pour in enough water so that the mixture is creamy but not too thick.
- 9. Let the Soljanka simmer for about 30 minutes until the meat is tender.
- 10. Adjust the soup to taste with more water, ketchup, or spices if needed.
- 11. Prepare small bowls of crème fraîche or sour cream for serving.
- 12. Serve the Soljanka with garlic baguette from the oven or fresh baguette from the bakery.
