🍽️ Light Swedish Summer Soup

Ingredients
- 3 large potato(es)
- 1 leek stalk(s)
- 2 tbsp butter
- 0.75 liter vegetable broth
- 200 g salmon fillet(s)
- 100 ml cream
- 3 tbsp dill (chopped)
Instructions
- 1. Wash the potatoes thoroughly.
- 2. Peel the potatoes.
- 3. Cut the potatoes into small cubes.
- 4. Clean the leek.
- 5. Slice the leek into thin rings.
- 6. Melt the butter in a pot.
- 7. Sauté the potato cubes and leek rings briefly in the butter.
- 8. Pour in the vegetable broth.
- 9. Let the soup simmer for 15 minutes.
- 10. Blend the soup briefly with a hand blender if desired.
- 11. Cut the salmon into bite-sized pieces.
- 12. Add the salmon pieces to the soup.
- 13. Let everything steep for another 5 minutes.
- 14. Stir the cream into the soup.
- 15. Sprinkle fresh dill over the soup.
- 16. Serve the soup hot.
