🍽️ Wild Garlic Cream Soup with Croutons and Fried Chorizo

Ingredients
- 50 g shallot(s)
- 1 small clove(s) of garlic
- 30 g butter
- 400 ml broth
- 1 small potato(es)
- 300 ml cream
- 50 g sour cream
- 1 bunch wild garlic
- 4 slice(s) sausage (chorizo)
- 2 slice(s) toast bread
- 1 clove(s) of garlic
- 1 small shallot(s)
- 80 g butter
- salt and pepper
- nutmeg
Instructions
- 1. Dice the shallots finely and sauté them together with the halved clove of garlic in a pot with butter. Deglaze with broth. Peel the potato, cut it into coarse cubes.
- 2. Add the potatoes and simmer gently until they are soft.
- 3. Meanwhile, cut the chorizo into small pieces and fry them in a pan.
- 4. Cut the toast bread into even cubes. Toast these in a pan with butter,
- 5. the clove of garlic and the whole peeled shallot until golden brown. Drain on kitchen paper and sprinkle with salt. (If you like, you can also reuse the garlic and shallot in the soup.)
- 6. Chop the wild garlic finely and add it to the soup along with the cream. Bring to a brief boil, add the sour cream and season with pepper and nutmeg. Then puree with a mixer until the soup is nicely frothy.
- 7. Serving: Fill the soup into a deep plate or bowl, sprinkle the fried chorizo and croutons on top. Enjoy your meal!
