  2. 2. Clean the soup greens and roughly chop them; precision isn't necessary.
  3. 3. Put everything into a large pot and add enough water to just cover the vegetables. Cook in vegetable broth.
  4. 4. Then pass the mixture through a food mill. Season with salt and vegetable broth to taste, and if the soup is too thick, dilute with water. I personally prefer it to be a bit creamier.
  5. 5. Finally, slice the sausages and stir them in.
  6. 6. My tip: Reheated, the soup tastes even better, making it great for meal prep.
