  1. 1. Wash the eggplant thoroughly, slice it lengthwise into slices, and fry in hot oil until golden brown on both sides.
  2. 2. In the meantime, cut the buns open. Slice the tomatoes and the peeled avocado into thick slices and lightly salt them.
  3. 3. Press or finely chop the garlic and mix well with yogurt, mayonnaise, Tabasco, salt, and pepper. Spread this mixture on both halves of the buns.
  4. 4. First, top the bottom bun half with lettuce, followed by two slices each of eggplant, avocado, and tomato, then close with the top bun half. Secure the burger with wooden skewers if desired.
  5. 5. This recipe can also be adapted, for example with fried portobello mushrooms or grilled zucchini slices.
